Chères Dames de la Chaîne, Chers Confrères, dear friends, and future members of the Chaîne des Rôtisseurs,
The history of the association begins in 1248, before founding the Confederation of Switzerland, when King Louis IX, who was later canonised under the name of Saint-Louis, gave permission for the creation of the guild of goose roasters the "ayeurs". This guild had the function of improving the technical knowledge of its members: Apprentices, Merchants and Masters. The Royal recognition was conferred to them in 1610 with the presentation of the professional emblem of the "Roaster". In 1789, during the French Revolution, this guild as well as all the others, was disbanded. On Easter 1950, in Paris, the association was reconstituted and given the name of "La Confrérie de la Chaîne des Rôtisseurs".
The Chaîne des Rôtisseurs is the oldest and largest gastronomic association in the world, uniting professionals, and amateurs.
